Company Overview
Iranian Saffron Production
At ELI, we believe that exceptional saffron begins with exceptional cultivation. Iranian saffron is produced through a careful combination of traditional farming knowledge, favorable growing conditions, and meticulous harvesting and processing.
ELI works with trusted saffron producers in Iran to source high-quality saffron and maintain strict attention to quality throughout the production process, from cultivation and harvesting to processing, grading, packaging, and delivery.
Where Iranian Saffron Is Produced
Iran is one of the world's most important saffron-producing countries. The country's dry climate, fertile soil, sunny days, and suitable temperature conditions provide an excellent environment for growing saffron.
Much of Iran's saffron production takes place in the northeastern provinces, particularly in the regions of Khorasan Razavi and South Khorasan.
Major Iranian Saffron-Producing Regions

- South Khorasan
- Torbat Heydarieh
- Ghayen
- Birjand
- Neyshabur

How Iranian Saffron Is Produced
Producing high-quality saffron requires patience and careful attention at every stage. The saffron production process begins with planting healthy saffron corms and continues through cultivation, flowering, harvesting, drying, grading, and packaging.
1. Saffron Corm Planting
Saffron begins its life from underground corms. Healthy saffron corms are planted in suitable soil during the appropriate growing season. Farmers carefully prepare the land to create suitable conditions for healthy plant development.
2. Saffron Cultivation
During the growing period, saffron plants develop leaves and prepare for their flowering season. Farmers monitor the fields and manage cultivation conditions to support healthy growth and strong flowers.
3. Saffron Flowering
Saffron flowers typically appear during the autumn flowering season. The beautiful purple flowers contain the valuable red stigmas that become saffron after careful harvesting and processing.
4. Hand Harvesting
Saffron flowers are carefully harvested by hand. Because the flowers are delicate and the valuable saffron stigmas are small, harvesting requires speed, experience, and attention to detail.
5. Separating the Saffron Stigmas
After harvesting, the flowers are carefully opened and the saffron stigmas are separated. The quality and appearance of the final saffron depend greatly on careful handling during this stage.
6. Saffron Drying
Fresh saffron stigmas contain moisture and must be carefully dried before storage and packaging. Controlled drying helps preserve the saffron's characteristic aroma, color, flavor, and quality.
7. Cleaning and Grading
Once dried, saffron is cleaned and carefully graded according to characteristics such as appearance, color, aroma, and the type of saffron threads.
Depending on the final product, saffron may be classified into grades such as Super Negin, Negin, Sargol, Pushal, and other commercial categories.
8. Quality Control
Quality control is an important part of ELI's production and supply process. We focus on the authenticity, purity, appearance, aroma, color strength, cleanliness, and consistency of our saffron products.
9. Packaging
After quality selection, saffron is prepared for packaging according to the customer's requirements. ELI can supply saffron in retail, premium, food-service, bulk, and private-label formats.
From Saffron Flower to Premium Product
Every kilogram of dried saffron represents a significant amount of careful agricultural work because saffron threads are obtained from the delicate stigmas of saffron flowers.
This labor-intensive process is one of the reasons authentic saffron is considered one of the world's most valuable spices.
